Description

Besan Barfi is a classic Indian sweet made from roasted chickpea flour (besan), ghee (clarified butter), sugar, and flavored with cardamom. It's known for its dense, fudge-like texture and nutty flavor, often enjoyed during festivals and special occasions.

Besan Barfi is a classic Indian dessert that highlights the rich flavors of roasted chickpea flour (besan), combined with ghee, sugar, and aromatic spices. This sweet treat is popular across India and is cherished for its melt-in-the-mouth texture and irresistible taste.

To prepare Besan Barfi, besan is dry-roasted in ghee until it turns golden brown and releases a nutty aroma. This roasting process is crucial as it enhances the flavor of besan and removes any raw taste. Once roasted, the besan is set aside to cool slightly.

In a separate pan, sugar is dissolved in water to make a sugar syrup. The besan is then added to the sugar syrup along with more ghee and stirred continuously over low heat. As the mixture thickens, it starts to leave the sides of the pan.

At this stage, ground cardamom or other flavorings like saffron may be added to enhance the taste. The thickened mixture is then poured into a greased tray or plate and smoothed out evenly. It is left to cool and set, after which it is cut into diamond-shaped or square pieces, each called a Barfi.

Besan Barfi is often garnished with chopped nuts such as almonds or pistachios for added texture and visual appeal. It is enjoyed as a dessert during festivals like Diwali, Raksha Bandhan, and Holi, as well as weddings and other celebrations. Its dense, fudge-like texture and nutty flavor make it a favorite among those with a sweet tooth.
